SIGNATURE | RADICAL In this section we offer a selection of our signature cocktails crafted by our SM23 mixologists by using molecular technique in our foams and grilled juices as well as a radical use of ice: using giant ice spheres and double frozen ice.
Burnt Lemon & Vanilla Margarita burnt lemon deliciously married with vanillainfusedpatron anejo tequila, cointreau, finished with a hint of demerera syrup served straight up.
Scorched Lime & Ginseng Daiquiri ten care rum shaken with freshly charred lime juice & finished with grilled ginseng and a whisper of ginseng liqueur served in a couplet glass.
SM23 Colada a simple but radical fusion of premium light and dark rums with a subtle amount of apricot and passion fruit liqueurs, balanced with pressed pineapple and orange juices, and lightly crowned with over proof rum served straight up atop a nitrogen charged coconut foam & finished with toasted coconuts.

Asian Influence- a mouthwatering blend of freshly plucked lychees and freshly pressed apple juice perfectly married with fresh ginger and kaffir lime, and spiked with belvedere vodka served long over crushed ice
English Garden succulent green apples perfectly balanced with fresh ripe cucumber and freshly pressed apple juice, spiked with Plymouth gin and elderflower cordial served straight up.
